i was misinformed.
mixing vinegar+sugar {should taste like sweet, tangy calamansi or other citrus concentrate} and cold water was right but the grated radish needed more work; otherwise it will be bitter. so the grated radish prep goes like this:
- generously sprinkle w/ rock salt
- work it in {think 'knead' - mix, fold, massage. you get the point}
- grab a handful, squeeze out liquid, separate
- throw away the liquid
- do it again
then the mixed-vinegar-sugar-water is poured {if you want sliced tomatoes too, add them at this point}. mix everything. the ratio of the vinegar/sugar/water mix should cover at least 1/4 of the grated radish {eye-ball it, depends on the bowl/container}. taste it. it should be sweet, sour, tangy {and make you do a sour face}.
