Atcharang Ampalaya

Image
Atcharang Ampalaya... Pickled Ampalaya... Ampalaya Salad It doesn't look like a lot from the pic pero bawas na yan kasi kumain ako. Super simple to make with 1 Ampalaya + 1/4 White Onion (or 1 small shallot) + 1 Tomato + Vinegar, Sugar, Cold Water. Prepare the ampalaya properly: Cut lengthwise, slice thinly. Put it in a bowl, add lots of coarse salt + water (a.k.a brine) until submerged. Leave it to brine for ~30 minutes. Then, massage it hard with your hands - drain the brine - add water - massage again - drain water - done! This really removes most of the bitterness from the ampalaya. Prep the tomato by removing the seeds first and slicing to about the same size as the ampalaya. Slice the onion the same way. Put the prepped ampalaya, tomato and onion in a container. The pickling juice/marinade is 1 part vinegar to half parts sugar and cold water. In a separate bowl, dissolve the suger in vinegar first before adding the cold water. Condo Living: Taas ng Water Bill [SOLVED]

Image
We get good water pressure. But a few times a year, it gets too strong that our kitchen faucet, bathroom shower, and bathroom sink faucet will leak. Nevertheless, we normally average maybe 15 cu.m. a month and our bill would be around 300 pesos depending on the rate. *This is a 1BR/1BA unit.  September 2021: Our water consumption spiked to 35 cu.m. compared to the previous billing. It was over 600 pesos! The water pressure was so strong that I had to replace the kitchen and bathroom sink faucets to stop the leaks. Water started to run into the toilet bowl too -- but we could fix that just by tapping the flush lever.  However, we did notice loud noise coming from inside the toilet tank like it was refilling itself sporadically -- I ignored this thinking that it will eventually stop when the water pressure in our building returns to normal. October 2021: Our water consumption is higher at 42 cu.m. and the bill is over 800 pesos! Crazy. I went down to get my statement of account (SOA)

Paranaque Covid Vaccination 1st Dose

Image
We had our first dose of Sinovac yesterday morning. Our community submitted a request to the local government a couple of months ago to conduct Covid vaccination here and it was approved. It was held in our clubhouse yesterday at 8 a.m., and it was a smooth process. It was well organized which shows that they know what they're doing. First Dose Experience Woke up at 6 a.m., ate breakfast, and got ready. We went down to the clubhouse a little before 8 a.m. We showed our ID for confirmation that we were on the pre-registered list. We filled up the consent form, went through screening/interview, got our shot, and waited at the observation section for 15-30 minutes. While we were waiting to leave, a doctor with a microphone thanked everyone for taking the vaccine and spoke about how important it is to get vaccinated, common side-effects, etc. All good.*thumbs up* The Side-Effects I got up really early for this. We went around the community afterwards since it was nice and cool
